Fire Roasted Chicken Tacos

Busy weeknight taco night just got easier! These Fire Roasted Chicken Tacos are smoky, tender, and just a little sweet thanks to the drizzle of hot honey. I first made these on a night when we were running from school pick-up to practice, and quickly became one of our “make again” meals! You toss everything in the slow cooker, and hours later you’ve got juicy, flavor-packed chicken ready to roll in warm tortilla shells.

Equipment
- 1 slow cooker
Ingredients
- 2 tbsp extra virgin olive oil
- 2 lb organic chicken breast
- 1 packet mild Siete Taco seasoning
- 14.5 oz organic fire roasted tomatoes
- 2 organic chipotles in adobo sauce
- 2 tbsp organic hot honey
- 1 organic onion sliced
- 10 organic small tortilla shells
Topping
- shredded organic cheese
- lettuce
- sour cream
- hot sauce
Instructions
- In a slow cooker on slow cook high, add in 2 tbsp extra virgin olive oil, 2 lb organic chicken breast, 1 packet mild Siete Taco seasoning, 14.5 oz organic fire roasted tomatoes, 2 organic chipotles in adobo sauce, 2 tbsp organic hot honey and 1 organic onion sliced.
- Place the lid on and cook for 4 hours on high or 8 hours on low. Half way through, use a spatula to break up the chicken and stir. Place the lid back on and continue cooking.
- Remove and place on your favorite tortilla shells. Top with your favorite toppings like the ones suggested in the ingredients.
Storage and Freezer Tips
Refrigerator: Store leftover in an airtight container up to 3 days.
Freezer: Freeze leftover chicken in a stasher bag or freezer safe container up to 3 months.
Substitution and Variations
Protein:Try pork shoulder or turkey breast.
Heat: For less heat, reduce to 1 chipotle and for more increase to 3 chipotle.
Add-Ins: Toss in corn or black beans.
