Equipment

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1 Onion (sliced in rings)
  • 1 lb Ground chicken
  • 3/4 cup Einkorn flour
  • 2 Whole garlic cloves (crushed)
  • 1 tsp Pink himalayan salt
  • 1 Egg
  • 1/2 cup Gluten free panko you can use gluten
  • 1/4 tsp Black pepper
  • 1/4 tsp  Dried thyme
  • 1 tsp Onion powder

Sauce

  • 1/8 cup Einkorn flour
  • 1 cup Chicken broth
  • 1/4 cup Dry white wine
  • 1/2 cup Gruyere

Instructions

  • Sautee the1 Onion sliced with with 1 tbsp Extra virgin olive oil in a pan and cook onions through until translucent. Let cool
  • In a bowl combine the cooked onions,1 lb Ground chicken, 2 Whole garlic cloves minced, 1 tsp Pink himalayan salt, 1 Egg, 1/2 cup Gluten free panko, 1/4 tsp Black pepper,1/4 tsp  Dried thyme and 1 tsp Onion powder in a bowl.
  • Form into balls about 1 TBSP. each. I use a medium cookie scoop.
  • Heat a pan to medium and add in some olive oil. (I used my all in one cooker.) Brown the meatballs on all sides and turn to low.
  • Cover for 10 minutes. Sprinkle in the 1/8 cup Einkorn flour and then add in the 1 cup Chicken broth and 1/4 cup Dry white wine.
  • Simmer another 20 minutes.
  • Top with 1/2 cup Gruyere shredded and cover 2 minutes until melted. Enjoy!
