Easy Slow Cooker Ground Beef Stroganoff (Creamy Crockpot Recipe)

If you love classic beef stroganoff but don’t have time to stand over the stove, this Slow Cooker Ground Beef Stroganoff is the kind of dinner that saves busy weeknights. It has all the cozy flavor of the traditional dish — creamy sauce, savory mushrooms, and tender beef — but the slow cooker does most of the work for you.

As a mom juggling school schedules, practices, and the usual evening chaos, I rely on meals like this that feel homemade without requiring a lot of hands-on cooking. This version uses ground beef instead of steak, which keeps the recipe budget friendly while still delivering that rich, comforting flavor everyone expects from stroganoff.

The sauce is simple but incredibly satisfying. Mushrooms, beef broth, Worcestershire sauce, and cream slowly cook together to create a deep savory base. Right at the end, sour cream is stirred in to give the sauce that signature creamy stroganoff texture that coats every bite of pasta.

One of my favorite things about this recipe is how flexible it is for real life. You can start it in the morning and let it cook low and slow all day, or cook it faster on high if you need dinner ready sooner. The pasta cooks directly in the slow cooker toward the end, which means fewer dishes and less effort.

This is also one of those meals that reheats beautifully, making it perfect for leftovers or lunch the next day. My kids love it served over wide egg noodles, but it’s also delicious with pappardelle, mashed potatoes, or even rice.

If you’re looking for a simple slow cooker dinner made with real ingredients, this creamy ground beef stroganoff is a recipe you’ll come back to again and again.

Make-Ahead & Busy Mom Prep Tips

  • Brown the beef the night before and store it in a glass container in the fridge. In the morning, just dump and go.
  • Pre-chop mushrooms and shallots ahead of time.
  • You can cook the beef mixture fully and freeze without the pasta. Add fresh pasta when reheating.

Storage & Freezer Tips

Store leftovers in airtight glass containers in the fridge for up to 4 days.

For freezing, I prefer freezing without the pasta (it reheats better). Use freezer-safe silicone trays or glass containers with locking lids. Freeze up to 2 months. Thaw overnight in the fridge and reheat gently on the stovetop, adding a splash of broth if needed.

Substitutions & Variations

  • Swap ground beef for ground turkey.
  • Use gluten-free pasta if needed.
  • Add spinach at the end for extra greens.
