Breakfast Sausage and Biscuit Bake

If your family loves biscuits and gravy like our family does, this Breakfast Sausage and Biscuit Bake takes that classic comfort breakfast up a notch. It’s packed with protein, baked all in one dish and so much easier to feed a crowd- especially on busy weekends or when you need to feed a crowd. I love that you can make the biscuits ahead, layer everything together, and pop it all together while you get the kids ready. Add in some sweet peppers and a dash of hot sauce if your crew likes a kick. If you want, you can skip the homemade biscuit part and just use store bought. The options are endless!

Breakfast Sausage and Biscuit Bake

Ingredients

Homemade Biscuits

  • 8 tbsp Butter
  • 3 cup All-purpose einkorn flour
  • 1 cup Buttermilk
  • 3 tsp Baking powder
  • 1 1/2 tsp Pink himalayan salt

Biscuit Bake

  • 8 einkorn flour biscuits from above or store bought
  • 1 lb. All-Natural Breakfast Sausage
  • 2 cup organic whole milk
  • 6 organic eggs
  • 1 tsp Everything But the Bagel Seasoning
  • 8 oz mild cheddar cheese or your favorite cheese

Instructions

Homemade Biscuits

  • (Skip the Biscuit Step if you bought store-bought biscuits) Grate the 8 tbsp Butter into a bowl and freeze in the freezer for 20 minutes.
  • Remove the butter and immediately cut in the 3 cup All-purpose einkorn flour, 1 1/2 tsp Pink himalayan salt and 3 tsp Baking powder with a pastry cutter. You can also use your hands.
  • Mix in the 1 cup Buttermilk until combined.
  • Pop in the refrigerator while you do the next steps.
  • Flour your work surface and preheat the oven to 450.
  • Pull the bowl out and roll the dough until 1/2 inch thick. Fold over and do the 5 times to get the “layers”. Roll out the final time to 3/4 inch thick. Use a biscuit cutter and cut straight down. If you don’t have one a glass will do, but try not to twist too much. Cut into circles ( makes about 12). Place the biscuits on a lined parchment paper. Freeze for later or continue on to the next step.

Biscuit Bake

  • Line a 8x8 square baking dish with parchment paper.
  • Use 8 einkorn flour biscuits from the recipe above. Slice into 8 pieces- like you are cutting a pie (4 slices in each).
  • On a stove top heat a skillet to medium heat. add in 1 lb. All-Natural Breakfast Sausage. Chop up to break into bits. Cook through (until all of the meat is browned). Let cool
  • In a bowl whisk together 2 cup organic whole milk, 6 organic eggs, 1 tsp Everything But the Bagel Seasoning.
  • In a lined 8x8 in dish spray the parchment paper with extra virgin olive oil. Add in the chopped biscuits and cooled sausage. Mix until combined.
  • Pour the egg mixture over top and mix again.
  • Sprinkle with 8 oz mild cheddar cheese shredded.
  • Bake in an oven at 350℉ for about 25-30 minutes until the center is bubbly and the eggs are bake through.
  • Remove and let cool 5-10 minutes.
  • Slice into squares and serve.

Notes

Buttermilk Substitute
  • If you don't have buttermilk you can add 1 TBSP white vinegar to the cup of milk. Let it sit together for 5 minutes and then stir. Add it in just like you would the buttermilk.
Reheat
  • Preheat an oven to 350f place in the oven for 10 minutes to warm or microwave at 30 second intervals.

Storage and Freezer Tips

Refrigerator: Store leftovers in a glass container in the refrigerator for up to 2 weeks.

Freezer: Slice into squares, place on a parchment lined baking sheet. Freeze for 2 hours and then transfer to a freezer safe bag or container.  Freeze up to 2 months.

Reheat: Warm in an oven preheated to 350f for about 10 minutes or place in an air fryer.  You can also heat in the microwave and heat on 30 second intervals.

Substitutions and Variations:

Spice it up:  Add in sweet peppers and hot sauce.

Add Veggies: Add in sauteed mushrooms, spinach and onions for extra nutrients.

Cheese: Change up the cheese- use gruyere, Swiss or pepper jack for a unique flavor.
