Cheesy Chicken Soup

This slow cooker cheesy chicken soup is a simple, comforting meal that comes together with minimal effort. It’s creamy, flavorful, and perfect for a cozy night in or busy weeknights. Just add everything to the slow cooker and let it do the work for you. This recipe also freezes well, making it ideal for batch prep and future meals.
Cheesy Chicken Soup
Equipment
- 1 slow cooker
Ingredients
- 1½ lb organic chicken breast
- 1 organic onion diced
- 1 organic celery stick diced
- 12 oz frozen broccoli crowns can use fresh too
- 2 carrots diced
- 1½ tsp pink Himalayan salt
- 1 tsp organic garlic powder
- 1 tsp organic onion powder
- 64 oz organic chicken broth
- 1 cup organic heavy cream
- 8 oz spiral pasta I like Goodles for added protein
- 16 oz sharp cheddar cheese grated from a blocl
Instructions
- In a slow cooker combine 1½ lb organic chicken breast, 1 organic onion diced, 1 organic celery stick diced, 12 oz frozen broccoli crowns, 2 carrots diced, 1½ tsp pink Himalayan salt, 1 tsp organic garlic powder, 1 tsp organic onion powder, 64 oz organic chicken broth and 1 cup organic heavy cream.
- Stir and turn the slow cooker to high. Place the lid on and cook for 5 ½ hours.
- Remove the lid and take out the 2 chicken breast. Place on a plate and shred.
- Add the chicken breast back in and 8 oz spiral pasta. Place the lid back on and cook another 20-30 minutes until the pasta is done. Be sure to not overcook the pasta.
- Turn the heat to low and slowly and in the 16 oz sharp cheddar cheese and stir.
- Serve immediately.
Notes
To Freeze, let cook to room temperature.
Place in a freezer safe container and store in the freezer for up to 2 months.
